Menus prepared by ABC Catering can be custom tailored to meet your specific
needs. As a client of ABC Catering you will deal directly with the owners, who
will put their years of experience to work helping you with every aspect of
your event. From the smallest get-together or
family reunion, to the largest wedding,
ABC has the expertise and knowledge to help you plan it all.             
    


This menu is excellent for wedding receptions, reunions, formal,
and in-formal entertainment.
Pricing of our menu will vary based on your individual needs.

Food Stations require a minimum of 100 people and a minimum of 30
people required on all other menus.  

Also included are white paper napkins, plates, cups, flatware, choice of two
non-carbonated beverages, tables for food, chafing dishes,
servers, set-up and clean up.
Tables and chairs for guest are furnished at Yogi on The Lake.

Choose from our exclusive venues of Yogi on The Lake, a Jellystone Resort in
Pelahatchie, MS., the Herndon Farm in Brookhaven, MS, Castle Hill Pavillion in
Florence, MS, or in your own backyard.
We provide full service catering and event planning
from the tables, chairs, tents,flowers to the food, servers,
        and entertainment.

Food Stations

The Biloxi Bay

Boiled, peeled, and de-veined gulf shrimp, marinated crab fingers, fried
grouper fingers, and oysters fried or on the half-shell served with cocktail
sauce, lemons, and horseradish displayed around a Gulf Coast Theme

Beale Street

Hickory smoked pulled pork, BBQ chicken drummettes, and a choice of
slow smoked beef brisket or BBQ St. Louis ribs served with hot rolls, BBQ
sauce, creamy ranch and southern coleslaw

California Gold

A massive display of fresh fruits, vegetables and cheddar cheese served with
fruit dip, vegetable dip and assorted crackers- a show piece in itself

Hot Potato

Assorted toppings and home-style creamed potatoes
Served in a martini glasses!!

New Orleans

Mini muffaletta sandwiches, carol meat and seafood filled fried pies and
beignets topped with powered sugar


The Green Field

Assorted salad greens including chopped romaine, iceburg mix, baby spinach,
and spring mix with assorted salad toppings of tomatoes, cucumbers,
mushrooms, green onions, olives, mini sweet pickles, diced eggs, cheese,
bacon bits, grilled chicken, diced ham, salad shrimp and assorted dressings
served with a mixed cold pasta salad and a fruit salad

Simply Southern

Boneless strips of fried chicken and catfish, fried okra, southern cheese
grits or southern macaroni and cheese served with sauces and dips


The Semolina

A classic live action pasta station lets your guest be creative with their choice
of two pastas: penne, bow tie, ziti, vermicelli, spaghetti, fettuccine or linguine
served with a red and white sauce and accompanied by grilled chicken,
shrimp or bay scallops, crab meat, assorted vegetables and herbs

Classic Carving

Your choice of two meats prime rib, roast beef, pork loin, pit-smoked ham or
smoked beef brisket all hand carved by our station attendant served with
appropriate
sauces or dips and hot rolls

Cajun Country

Choice of two classic Cajun dishes seafood gumbo, red beans and rice,
shrimp Creole, or jambalaya and served with mini crab cakes with sauce and
toasted French bread rounds

The Northwestern

Hardwood smoked Atlantic salmon served with capers, chive sour cream and
rye and pumpernickel toast points accompanied by fine caviar, with diced egg,
sour cream, mayonnaise and toasted baguettes

South of the Border

Fajitas your way - beef and/or chicken served with grilled bell pepper,
onions, and tomatoes served with sour cream, guacamole and salsa
accompanied by a multi-layered bean dip with corn chips and tortillas  

Over The Top Chocolate

A chocolate fountain over flowing with your milk chocolate surrounded by
fresh strawberries, marshmallows, pretzels, maraschino cherries, and
pirouline cookies (a chocolate cream filled cookie)

Dessert Station

Assorted bar desserts and brownies accompanied by fruit tarts and a choice
of vanilla, chocolate, or strawberry mousse
